Stevia

This is one of my all year ingredients and one of my favourite baselines for all non fruity brews.


If you want to skip the sugar in the second fermentation, though still want a lot of sweetness, stevia might do the trick for you. Note however that it does add its own taste, however it is way less intense in kombucha than in tee or other drinks. If you do not have fresh leaves, you can get it as powder in any pharmacy.


Usage

As with sugar, the amount is up to your liking.

Tried:

  • 1g fresh leaves - pretty sweet, but could be more for candy sweet drinks
