Mango

Problematic ingredient if you do not have a good source. Its hard to get organic mangos here in middle europe, and non organic cane have pretty bad side tastes. I rather go for frozen ones, as they tend to have a better quality.


I tried to get a good mango flavour for months, though I mostly disliked the taste. While at first I could not pin down the problem. After several tries I got a very intense sulfur taste in one of my batches. While eating the mango raw did not reveal a bad taste, letting it rest in milk for a few hours did. In the next tries I always used the same mango in different dishes and it became clear that most of them tasted fine when eaten raw but had bad side tastes when letting sit in liquids for some hours.

In the hope that frozen fruits have better quality (as they do not need that much treatment for shipping) I tried to use those for brewing. For most batches I got better results. However Im still not fully pleased.
