Lemon peel is an amazing ingredient that adds a lot of lemon flavour without adding additional acidity to the brew. Instead it adds a mild bitterness to the drink that can be very pleasant in combination with herbs or hop.

Usage

The following is valid for fresh lemon peel. For dried one half the amount:

• 3g main flavour
• 1g soft main flavour
• 0.5g sidekick

Note: 64g fresh lemon peel result in 18g dried lemon peel.
